With the vacation season comes an infinite quantity of feeling and thanks. My family is unbelievably blessed and that we ne'er must give some thought to whether or notwe’ll have food to eat. Not true for therefore several kids during this country.

Each year i choose one direction to share with you as a part of the Pin a direction, Feed a toddler campaign in partnership with Challenge and United Nations International Children's Emergency Fund. In years past i've got shared this chocolate Cranberry Cheesecake and these mini Chocolate Pecan Pies. This year, it’s mini cheese balls. You’re welcome.
I’m particularly happy wth this winning combination: cheesecheese, white cheddar, dried cranberries, pecans, and chives close for a pleasantly savory appetiser that's even as pretty because it is delicious.


Ingredients
  • 1/2 cup roughly chopped dried cranberries
  • 1/2 cup finely chopped pecans
  • 1/4 cup thinly sliced chives
  • 2 8 oz packages Challengecream cheese softened
  • 4 oz goat cheese
  • 4 oz white cheddar cheese grated (I grate the cheese on the smaller opening)
  • Coating
  • 1/2 cup thinly sliced chives
  • 1/2 cup finely chopped pecans
  • 1/2 cup chopped dried cranberries
  • 30 pretzel sticks

Instructions
  1. Combine the ingredients in a large bowl, stirring until combined.
  2. Use a cooke scoop to scoop out small balls.
  3. Roll into a ball using your hands.
  4. Place chives, pecans, and cranberries into separate, shallow bowls.
  5. Roll the cheese balls into your desired coating and spear with a pretzel stick.
  6. Refrigerate until ready to serve.
  7. If preparing more than 4 hours in advance, don't add the pretzel sticks until ready to serve.
  8. Serve with assorted crackers and pretzels.
